Individual types of Kampot pepper differ from each other in their taste and aroma, which you can hardly find in pepper bought in ordinary supermarkets:
Rare red pepper is an explosion of fruity notes with a gentler burn. At first, notes of rose and rosehip fruit dominate, which then transition into dried cherries. After two to three minutes, the more characteristic aromas of Kampot pepper begin to develop, such as citrus fruits, dried tangerines and an earthier crust of sourdough bread.
White pepper it is a gentle but still peppery caress of the taste buds. After it is ground, the aromas of camphor, sage and cedar wood develop, accompanied by the delicate aroma of nutmeg, grapefruit and other citrus fruits. After a few minutes in your mouth, you can feel notes of nutmeg, thyme flower and lemon balm underpinned by aromas of cedar and black tea.
black pepper after grinding, it releases notes of eucalyptus, camphor and thyme accompanied by the scent of lime peel. These gradually flow into a seaside aroma with developing fruity notes. The aroma of peach and nectarine is dominant, accompanied by the scent of pine and the earthy tones of the Cambodian mountain soil full of minerals.
