Kampot pepper is grown in the Kampot province, located in the far south of Southeast Asian Cambodia.

It is a region which, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the highest quality in the world. It’s no coincidence this pepper has earned protected geographical indication status, much like French Champagne.

We buy pepper from small family farms under direct trade conditions, which guarantee fair compensation for every grower, and we work to promote this approach among other sellers as well.

Characteristics

Freeze-dried green pepper brings the maximum fresh flavor of green peppercorns.

In this case, expect a peppery taste full of pungency in a very intense and rich form. The flavor of freeze-dried green pepper combines fresh notes of freshly cut grass, green tea, and citrus, with a delicate hint of sea salt.

Processing

Freeze-dried green pepper is harvested from fragile, still unripe peppercorns.

They are not sun-dried in the traditional way but go through the so-called freeze-drying process. During this, the grains are frozen and the moisture is removed. The added Kampot salt helps keep the grains fresh even during transport. After unpacking, just a drop of oil or water is enough to restore the moisture, and the freeze-dried grains regain their texture and flavor, as if you had just picked them from the pepper vine.

Thanks to careful selection based on the strict quality standards for Kampot export pepper, as set by the Kampot Pepper Association, only the best grains are handpicked. They are then vacuum-packed to ensure preserved quality and freshness during the journey to the Czech Republic, where they are further selected, packed and delivered all the way to your table.

Usage

Freeze-dried green Kampot pepper is the most versatile of all the green peppers we offer.

When crushed, it pairs beautifully with any type of meat – dark, light, game, or fish. It refreshes pasta, baked cheese dishes with mushrooms, and also sauces. It certainly won’t go unnoticed in autumn soups, and you can even experiment with it in desserts and ice cream – and the most refined palates will enjoy it paired with truffles.

Packaging

Thanks to the materials used and the special bag sealing technology, no air or moisture gets to the pepper.

Thanks to this, even after opening, the grains retain the authentic taste and aroma of Kampot pepper. Once emptied, you can also upcycle the bags as part of a sustainable approach and reuse them in many different ways. We pack the pepper in resealable bags with a volume of 20 grams.
